Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
These oatmeal biscuits are tender, chewy, and full of banana flavor! The recognizable cozy spices and plump raisins make them even more irresistible. They'll keep for at least one week if kept in an airtight container in the refrigerator--should they last long!
1 cup (100g) instant oats (fermented if essential and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like that )
1 1/2 tsp baking powder
1/4 teaspoon salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated. Let the cookie dough rest for 10 minutes.
Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.
